Shouldn't Lucario's attacks be super-effective against Jigglypuff? Shouldn't Pikachu's attacks be super effective against Squirtle and Charizard and NVE against Venusaur?

It depends on what attack. If Lucario used Metal claw on Jigglypuff, it would do good damage with STAB but it wouldn't be Super effective because Normal types arn't weak to Steel type moves.
