In my personal opinion Bakuman is a pretty important anime to watch if you want if you want to get into manga/anime. It just shows so much what goes into the back end of manga creation and is by the manga-ka of Death Note

Sounds like you're already off to a good start. Try Samurai Champloo or Space Dandy if you like Cowboy Bebop, and Mobile Suit Gundam or Patlabor if you like Gurren Lagann. You should also watch Jojo's Bizarre Adventure cuz it's the best.

If you want good Magical Girl stuff, Princess Tutu and Cardcaptor Sakura are always sure bets. I'd recommend the first one even if you're not a fan of magical girls.

Trigun is perhaps slightly less "must watch" than most of those, but still very good. Don't know if you saw Kill la Kill during its heydey or not but it's along the lines of Gurren Lagann-esque ridiculousness.
