They've probably taken those internet IQ tests that claim everyone is insanely above average-- for reference, a person is considered to have some form of MR at around 90, and average is around 100-110 I believe? Above average is ~120 and from that point onward you're dealing with someone considered gifted; most internet IQ tests tend to say EVERYONE is at something ridiculous like 150 though.
Granted, while IQ is a fine general indicator of a person's ability with certain skills, people with a massive score can still be total morons in really basic ways, and people with an average or below-average IQ score can be way more clever than their 'score' would indicate. Like most tests meant to categorize the abilities of large swathes of people, most IQ tests take some things for granted while totally failing to address others, or are badly made or written in general, or poorly administered, or a hundred other things. Some of my doctors, educators and etc. have said mine is supposedly so high I'm genuinely uncomfortable repeating their estimate because I'm pretty sure it's got to be bullshit, but while I excel at some skills that look impressive, I really suck at things other people grasp easily by comparison. It could be that I'm just exemplary in a few 'prized' fields, or that I'm poorly disciplined about the ones that aren't easy for me and give up too soon, or that they're off the mark entirely-- it's hard to say. Either way, when people start whipping out the IQ scores it's generally in a dick-measuring contest kind of way rather than "what the hell does this even mean" or a discussion about the measurement itself or something.

IQ tests are pretty bullshit anyways. A lot of their are tailored to whatever the test maker thinks is indicative of innate intelligence, which usually means things like pattern finding.
I took a practice one in 8th grade with my Algebra 2 teacher because he needed to give a test under the supervision of his instructor for his degree or something, and the results were 155.
It was all patterns and wood block puzzles and shit, basically what you'd find in a Layton game or a puzzle book. That shit's kinda easy to me. Doesn't really mean I'm automatically big balls better than everyone else. And I think some of that is a bit lost.
In high school, my Astronomy teacher's father was a scientist with an IQ of 170 and 3 masters degrees in physics, chemistry, and astronomy. He bodaciously could not find his way out of a grocery store because his sense of direction and general logic skills were just not there (and not because of a condition, he just couldn't even think to follow a wall until it took him to a door).
The big thing is, I think people invest into these things because it makes them feel superior. Things like MENSA really scream that, and it's just as annoying as the common dipshit who basically thinks they're a better person because they didn't go to college to get filled with "ideas", because they learned through experience.
The people who flaunt their IQ are the ones who are insecure enough to buy into it as an indicator of their status or achievement. Ultimately though, I subscribe to it as much as I do Astrology.

EDIT: One more thing. Your bit about the guy with 3 degrees in physics reminded me of something. Intellectually, my roommate is the smartest fucker I know. You give him a textbook, and a couple hours, and he'll understand all of chemistry (all of it). When it comes to social bits, and dealing with his girlfriend...he's a rock. Another guy I know has a 2.9 GPA, yet he's completely self taught on the subject of............herbology......

On IQ: I think I have better than average engineering and logic skills, but I also think I have a stronger sense of what is right and wrong than most people.
I don't think I've ever seen an IQ test geared to measure an individual's sense of right or wrong - perhaps something like that is too subjective to measure accurately?
