What's exactly the difference between High Grade, Master Grade, Perfect Grade etc.?

NG is non grade, where the quality and size varies wildly
FG is first grade, a kiddie grade for Gundam 00 kits. Cheesy, not well made
AG is advanced grade, same as FG but for Gundam AGE
HG is high grade, the most common kits. Usually 1/144 scale
MG is master grade, much more expensive and complicated to make, but better quality than HG. Usually 1/100 scale
PG is perfect grade, super expensive, complicated and rare, but are the best you can get. 1/60 scale
RG is real grade, a MG shrunken down to 1/144 scale

Also you got Mega sized models which are essentially 1/48 scaled HGs. Also got the better kits go from late 1990s to now era. That's where most of the more well engineered kits are at and with minimal stickering.

Ah I see, so they just have more details/are bigger?
Cause I was looking at some kits on ebay and there was from the same model 1/100 MG for ~$30 and PG 1/60 for far above $100 up to over $200 and more

PG is very rare, they make only short production runs of those kits
