You see, the blue skin symbolizes how ultimately, striving for material goods, i.e. the One Piece, is futile. She believes the 700+ chapters are a clear sign the author had the same rationale.

When she gets lazy and stops coloring his eyes, it's because his quest for wealth has blinded him to the important things in life, like love and family.
