I highly doubt people would prefer holosex to real sex.

Unless they prefer tentacle sex and/or holovaginas which can change shape and do other spectacular things.
Holopenises could do spectacular things too.

It feels safe to assume that won't be the majority.

You're all neglecting the fact that Holograms are images of light and have no physical substance
It would take an absurdly advanced hacking of your nervous system to create a hologram you could interact with in any meaningful way. A holodeck would be glorified 3DTV.

Solid light is a theory.

They are developing a room with magnets and use it to make metal objects out of filings.

Solid Light is a pretty stupid theory, and even if it worked it be fundamentally wrong on an absurd level. Say you want to make a leather chair to sit down in. A computer would have to arrange trillions upon trillions of light particles not only in the shape of a chair, but with the exact positioning, structure, and light refraction properties to simulate the texture and reflective property of leather. Even after that fact it would have to make another infinitely large number of calculations to mimic the way a chair changes shape under pressure as you sit down on it.

If holodecks were made, they'd probably directly manipulate the nervous system instead of wasting a googolplexian joules of energy to create solid objects.

The flaw in THAT angle is interactivity.
Returning to the chair example, just because your nervous system says your butt is in a chair doesn't mean there is anything supporting you, and you fall through your holographic chair. Even if you add hard light and sensory manipulation together, there will still be a broad disconnect between vision and touch. It'll be a hyper-advanced Uncanny Valley.

Yes, but in an age with interstellar star ships, I would think energy is a non issue.

Energy is always an issue. As is mass.

Technically an interstellar starship would be more concerned about energy than anything else, due to a lack of energy meaning a slow, freezing death in the endless hollow of space.
The fact of the matter is that Holodecks aren't rooted in any modern science. While it's entirely possible we will make a new discovery in the future, I'm basing my arguments on current facts.
I like the idea of playing poker with Holographic Genghis Khan as much as the next guy, but it isn't going to happen in my lifetime.

We'll probably have holodecks before interstellar travel (through the nervous system route). And there's no reason to take a route that is probably technologically more complicated and requires an absurd amount more enery, while it has essentially the same effect.

I'm talking about complete simulation, essentially making hyper-realistic dreams.

No poker. Only strip poker in the holodeck.
