Mix batter-then filling. Fill mini cupcake tins 1/2 full with batter then add filling so cups are about 3/4" full. Cook at 350º for 20 mins

For extra deliciousness, put them in the freezer

These are some of Sloth's favorite dessert things that I make.

OREO CANDY

INGREDIENTS:*****

35 or so oreos broken into chunks (divided in about half)

28 oz sweetened condensed milk

half a stick of butter (4tbs)

7 cups white choc. chips

2 tsp vanilla



INSTRUCCIÓNES:

1: Line a 13x9 pan with a smooth sheet of aluminum foil and nonstick spray it.

2: Pack down about 1/2 of the oreos in the bottom like a crust.

3: In a rather large pot, cook condensed milk and white chips, stirring almost constantly, until the chips are just barely melted.

4: Remove from heat and stir in vanilla

5: Pour into the pan and sprinkle with remaining cookes (they'll sink and mix in pretty evenly). Refrigerate until fully solid.


This is VERY sweet, so inch by inch squares are sufficient.



CHEATER'S FUDGE (called so because it's not nearly as painful as most candymaking):

INGREDIENTS:*****

4 cups sugar

1-1/3 cups evap. milk

2 sticks of butter (1 cup)

24 or so large marshmallows

pinch of salt

3 cups of semisweet chips

1 tbs vanilla


INSTRUCCIÓNES:

1: cook first 5 ingredients in a large pot over medium heat, stirring constantly. THE STIRRING IS VERY IMPORTANT, OR THE CANDY WILL BE A LUMPY MUSHY MESS.

2: Boil for five minutes. DO NOT STOP STIRRING.

3: remove from heat and add chocolate chips. stir until they're melted, and then stir in the vanilla.

4: pour into a foil-lined, 13x9 pan and refrigerate.



*****I don't know the exact measurements of some of these. It's just that whenever I make them, according to the packaging of ingredients, this is how much I use. These batches can also be halved to fit in an 8x8 pan.

The Best Toast

Ingredients
White bread
Milk
An egg
Sugar
Cinnamon
Olive oil

Utensils
Whisk (forks work too)
Deep dish
Frying pan
Spatula

Directions
Pour some milk into the deep dish.
Add an egg and whisk this shit up.
Add some sugar and cinnamon and whisk it like your life depends on it.
Take a slice of bread (or more), cut it in half vertically.
Now get some olive oil in that pan and set the temperature to medium.
Soak that bread real quick (unless the bread is old and dry) so that it doesn't stay too soggy, then set it in the pan.
Wait a while.
Use the spatula to check under the bread, should be golden brown-ish. Then flip it over and repeat until both sides are cooked.
Optional: Put some paper towels on a plate or in a deep dish and place the bread there to have the fat/oil excess absorbed.
Eat.
Then make some more because it's the greatest meal.

ENCHILADA TIIIIME~~~

SKILLET ENCHILADAS:

INGREDIENTES:

1 lb ground beef or chicken

1 med onion

1 large can of red or green enchilada sauce ('cause I'm too daisies lazy to learn how to make it myself) I prefer Rosarita brand (for those of you in US and Canadia)

1/3 cup of milk

8 large corn tortillas

shredded cheddar cheese

vegetable oil

seasonings: I use chili powder, cumin, rosemary, garlic, cilantro and a tiny bit of cocoa powder, but you can use whatever you like.


INSTRUCCIÓNES:

1: cook the meat and onion in a large skillet.

2: drain. Stir in enchilada sauce, milk and spices.

3: Bring to a boil and then simmer for 20 min.

4: in another skillet, heat about 1/4 inch deep oil. This is where there are some serious burn hazards, so be careful. Dip the tortillas on both sides for a few seconds, until soft, and set on a paper towel.

5: top the tortillas with meat mixture and cheese. Roll tightly closed. Once all 8 tortillas are filled, place them back into the skillet (the oil should have cooled, and they'll stay mostly closed).

6: spoon sauce over them and cook (covered) on low heat for about 5 min. Sprinkle with remaining cheese and cook until cheese is melted.



OVEN ENCHILADAS (these are great for thanksgiving and Christmas leftover turkey):

INGREDIENTES:

Semi-shredded chunks of chicken or turkey (mix of white and dark meat is best)

2 small cans of green enchilada sauce

Flour tortillas

a pack or two of cream cheese

Shredded cheddar cheese

seasonings (see skillet enchiladas for my preferred mix)


INSTRUCCIÓNES:

Preheat oven to 350F/170-180C

1: Lightly cook turkey/chicken in just enough enchilada sauce to coat the meat. Season further if you want.

2: While that's sitting and soaking up some flavor (and moisture), spread some cream cheese down the middle of each tortilla (think about how thick you'd spread it on a bagel)

3: pour a thin coat of enchilada sauce on the bottom of a 13x9 (or something close to it) pan.

4: put turkey on the tortillas and roll tightly. place seam-down onto the enchilada sauce. Pour more enchilada sauce over it and sprinke with cheddar cheese.

Bake at 350F/ 170C for about 20 min (the meat's already cooked, you're just letting it all mingle together) and until the cheese is melted.
