Basically the only ones I've watched so far are Cowboy Bebop, Gurren Lagann and a bit of Lucky Star, so there should be a lot of choices I guess.

I've only watched a few episodes myself, ad my friend says that the manga is better; but I recommend watching Air Gear. It's got naked girls in it, science, violence, and a good plot. (apparently, I mean, I can't tell good plot [ala... dunno] from bad plot [ala Transformers 2] so you'll have to take someone else's word for it)

Second, consider what genres you really like. If a new anime catches your eye, try watching the first episode.
