Uhhmmm. I guess I'll list the ones I've played. And stuff.
I: I only played the GBA port. First FF game to beat, actually.
II: I got like 1/4th through the game before deciding to be a cheating bastard.
III: I've played the NES version on an emulator and was content with it. I used to have the DS remake (and lost it ffff). Honestly this is my 2nd favorite Nintendo title.
IV: Played the GBA port and liked it. Edward was my favorite character [/shot]. I got the DS remake and although it was very fun, I liked the GBA port better for more customization + Lunar Trials.
V: I only played the GBA port on an emulator. Loved the job system.
VI: An engaging story with a vast amount of characters, most with stellar character development. My favorite Nintendo title. I have the GBA port, but I accidentally smashed the cartridge on my desk while I was playing a 2nd Playthough. The sound on the whole game was forever corrupted. OTL
IX: First FF Game, I played it when I was like 11, borrowing it from a friend and playing their 4th disk file without saving; blindly running around. I downloaded it onto my PS3 via PSN Store, and I'm playing through it now.
X: I was fine with it, I liked it, but that's it.
X-2: Somehow I managed to get near the end until everything just reiped me hard. I wouldn't replay it.
XII: Rage quit when I saw that my next objective was on the other side of the continent.
Tactics: I'm pretty much obsessed with this right now. Got it on my PS3.
Tactics Advance: I liked it back then, but the original and TA2 outshine it.
Tactics Advance 2: Liked it for a while, then things got boring when I beat the game on a second file, 2 years after my first file.
Crystal Chronicles - Rings of Fate: I was obsessed with this game for a while, especially during vacations. Beat the game probably around 7 times. Couldn't enjoy Multiplay to the full potential because I have no friends. Derp.
Crystal Chronicles - Echoes of Time: I liked this a bit better than RoT, although the AI was horrible. Features a slightly mindfawk story. Also, level gaps + lack of multiple save files = Rage and restarting the game on Normal. Couldn't enjoy it to the full potential due to the same reason.

Let's go:
I - Was actually pretty good, all things considered. The spellcasting was a little annoying, but once you get the Gauntlets and the Holy Axe everything's cool.
II - ...I liked II. Like, kind of a lot. Grinding used to annoy me, until I learned two things - that it's faster to grind by beating yourself up, and that it's stupid to level up your guest characters. The story is simple but still rather satisfying (it feels great to kill that stupid Emperor with a pair of blood swords, after all the crap he's put the world and underworld through).
IV - This is the only FF that I haven't immediately grown attached to. I don't hate it, but I don't really like it either. I'm not too far in the game (Tower of Zot), so maybe it gets better, but...
VII - I like this one overall. The one thing I don't like gameplay wise is that, due to the materia system, everyone is nearly identical and you can put whoever you want on your team with materia to make them a fighter/spellcaster/buffer/whatever. Though, I guess the good of this is you can have whoever you want on your team... Which means I can use Cid and Red XIII all the time, yes.
IX - This one's my second favorite. It has everything every good FF has - enjoyable characters, great music, and a really unique storyline. The only flaws are that some story elements (notably Freya's and even Zidane's main storylines) are pushed to the side to focus on Garnet and Vivi. It doesn't detract from the game though, just shows where it could have been expanded.
X - My absolute favorite, hands down. The music is phenomenal and every character gets a significant amount of development throughout the story (even Kimahri). I enjoyed the voice acting; it gave real life to the characters. The romance bothered me a little when I first played (I was like twelve and it was gross then), but playing through now, I don't see it as beating-you-over-the-head, more as an element of motivation for Tidus, and something to make the player feel sad at the ending.
X-2 - I also like this one, though for reasons most others don't. Most X fans hate it for ruining Yuna, changing the ending to X; most other people cry fanservice and bad story, whatever. I like it because, aside from the main (and admittedly, pretty lame) story, the background story is interesting: we get to see the people of Spira rebuild. After years of living with fear of death, we get to see their hope, as they take charge of their lives... and see the corruption that spreads not months after their newfound freedom. As a X fan, I found the events of Spira after Sin way more interesting than the developers probably intended.
XII - Is pretty great. The actual story moves slowly in some places, but the absolutely huge amount of sidequests makes up for it. The voice acting is great, as well as the dialogue itself, and the characters just might be some of the most realistic the series has seen (personality wise, that is). The music is a little lacking, but it's still great.
Dissidia - I don't even own this game, and I love it. So what if I don't know all the intricate background info on half the characters? It's ridiculously fun. You can hit Sephiroth in the face with a blitzball. What else do you need?
So, I'd rank them in this order:
X, IX, XII and VII (tie), X-2, II, I, IV.

II: Have it on PSP but can't actually finish it because I keep accidentally formatting my memory card.
VII-CC: Played this but once again, memory card.
IX: Borrowed it from a friend and got up to the third disc, absolutely loved it. Found the story interesting, characters like-able, and the gameplay was good.
X: Loved it. Haven't finished it actually, but I'm in Zanarkand. Characters likeable, Summons are fun, Story is great. Loved the battle system.
XII: Played it, stopped when I got to the first Judge battle and I kept losing because I didn't grind enough. Didn't want to restart. Battle system was a nice change, characters and plot: see Star Wars: The Prequel Trilogy.
XIII: I'm actually enjoying this game. The graphics look amazing. The characters are very like-able and finally Hope is starting to be less of a pansy booty wangst boy. Vanielle's still a bit of a whore though.
Battle system was very nice and I loved the paradigm system. Only thing I don't like are the god-damned boss battles such as Lightning versus Odin.

But then again I don't actually own FFX and I never got past the first blitzball game.
