How do you main a role? I mean if someone calls support first, or if someone auto locks, you should be flexible enough to switch to fit the team

I can go mid, top, or adc. If there's no way for me to get one of those, I'm dodging because we'll lose anyway and it'll be all my fault

I find dodging kinda silly. You should be able to play any role, if you're not comfortable with it, let your team know and hopefully you can work out something. Once you get in game just say something like "I'd like top, mid, adc" or "anything but jungle and support"
As a support/jungle main (no bias lololol), those roles are super important to learn, I think, because despite not having the title "carry" they can make the most difference in a game IMO, through warding, coordinating objectives, and map pressure. Warding alone can turn around bad games just by letting your team avoid bad situations. Whenever I have a game where we're losing pretty hard and don't have much cheddar to buy stuff, I buy wards instead.
I digress, but all I'm saying is its okay to "main" a role, as long as you can weigh the benefits of forcing your way into a role with the benefits of being flexible to your team (hint: the latter is more important unless you are truly truly terrible at another role). That goes for picking champs as well - counterpicking vs how good you are with a particular champ. If you're really good at one champ, you might be able to handle a "hard" matchup.
Besides, you learn a lot more from challenging games. Losing is just a part of the game, it happens sometimes, but you can always improve from your mistakes.

I might try those roles as I play more bots/normals but I'm not going to make my team suffer (and listen to their sudden but inevitable douchebaggary) because of something I just can't do.

When I said I "main" support, I don't mean "support or feed". I can perform in any role, top is actually my best non-support role at the moment because Singed and Jayce are just really safe picks that I know how to do well on in most situations. In mid, I prefer to play Karthus, but because he does get countered so well, I want to learn other picks. Lux is super easy and a no brainer champ. I played Morgana to some success, and would be comfortable playing her in ranked if the enemy mid doesn't seem like a hard counter.
Jungle is like a roaming support, which is hard, because while an ADC can blame their mistakes on the support, the whole team can blame their mistakes on the jungler. I used to play Mundo and Nunu, but their ganks and teamfight skills are super lackluster under most situations. Now if I got jungle in a ranked match, I would play Chogath or Amumu. I am learning Hecarim, but as he is banned most of the time in ranked(well, I ban him, so I never see if the enemy actually does), I wouldn't count on getting him in ranked.
My worst role is ADC because my mechanics are godawful for autoattack-based champs. In teamfights I focus a target and do maybe 2 autos and then die because my positioning was terrible. In lane I can do ok, but my mechanics still prevent me from being better then most other people who could play it.
I main support because of many reasons. It basically allows me to basically play an AP caster who has a large role in teamfights, but in a role where I have the least chance of messing up. If you want to learn how to support, just grab Sona. Low cooldown, spamable high impact abilities. You just mash all the keys constantly and you can't possibly mess up. Unless you are in an extended teamfight, or you came in at low mana, it's really hard to run out of mana. The hardest thing to learn about her is to use her passive effectively, which basically puts her last used ability into an autoattack. What you do is Q, then autoattack in lane for massive poke(Seriously, those things NUKE just about anybody). If a gank happens, you can use W auto for a damage exhaust, or E auto for slow exhaust.
Also point and click AOE ult, not hard to fail.
Once you use Sona to learn how to support effectively, you can jump into harder champions like Thresh, Nami, Zyra, or Lulu. Each have their unique playstyles and uses.

If you want to learn more mid people I would recommend Annie, she's the quintessential easy Mage but she does have some nuance to her (how to stun and where, getting health or more ap, etc)

B-but Nunu's teamfights are lackluster. He has blood boil which is neither here nor there and requires the AD to do things, his snowball is good for peeling a single target, and his ult is pretty good. Not the worst but certainly not the best either. He basically just becomes a peel bot for the carries.

I find that Nunus tend to go all Lone Ranger from early to mid game, just kinda chasing after people when ganks happen and not doing much in teamfights, but if he gets fed his ult can get really scary lategame and make or break a fight.
It depends. I think all he's saying is that an aoe slow and a snowball aren't much teamfight cc compared to say, a Zac. It's still good but his kit as a whole isn't geared towards teamfighting, I think he's strongest mid game when he can roam a bit and join in smaller fights where his skills make a bigger difference.
