You could start with vanilla and not worry about it until you start getting up in levels, or buy the battle chest of vanilla+BC for cheaper.
BC is good if you want to start of with Drae'nei and Blood Elves.
For recommended classes, I'd say hunter and pally to start out with. They're the easiest classes.

Don't worry about being behind. The leveling process in WoW is constantly nerfed to make it so that level 1-60 pre-expansion is the same time it takes to get 1-70 after Burning Crusade, and 1-80 after WotLK came out.

Actually, I think it technically takes less time to get to level 80 now than it did to get to level 60 way back when @.@
Level 60 used to be hell to get to. Nowadays, even playing casually, as long as you log out inside a city/inn every day, you can generally get at least 1 level a day after level 20. All the way up until around level 72.
So you're basically looking at 3 months to reach level cap if you play lightly. If you play hardcore you'll be getting there in meh, a month?

Meh, the worst played classes I usually see are hunters and DKs. For hunters I guess people are just confused as to why they have any melee attacks at all as a ranged class.

Hunters being the nooby class is kinda an old thing, but it still exists. 1. Hunter level is so easy you could do it blindfolded, while masturbating to porn, without even looking at the game screen. It's boring. It's easy. It's repetitive.
2. Enter high end content: Hunters are actually reasonable hard to play in group situations correctly. They have a wide variety of group skills that they never use while leveling. They are possibly the hardest class to use properly in group situations.
Because of reason 1, people tend to tell first time players "oh do a hunter, it's easy." So when 2 occurs, and hunters do group content, you have a huge overpopulation of inexperienced players that try and do group fighting the same way they solo. And bomb horribly.
While you can bodaciously faceroll level, if you try to do group content the way you solo, you're looking at the difference at level 80 between 400 DPS and about 2000 DPS. Needless to say, it's pretty significant. People aren't pop flyin' if you do around 20% of the damage you are capable of doing, for obvious reasons.
TL;DR: Hunters are the easiest class to solo. Hunters are probably the hardest class to use in groups. A huge number of new players chose to play hunters because they are easy to solo.

I was still able to challenge myself a bit while leveling as Hunter by being completely stupid and attempting things that I should not be attempting.
Like soloing bosses that were made for like 3 or 4 people. Or soloing dungeons (because I didn't realize you could queue at first, and I figured that doing it myself was the only way I could get those quests done because I didn't think I could find a group. I attempted Ragefire Chasm, Razorfen Kraul, and Gnomeregan. I only manged to finish Ragefire Chasm, but I got REALLY CLOSE to the end of Gnomeregan, and did manage to pull it off when I was about 4 or 5 levels above everything. After that I discovered the dungeon finder and never tried to solo one again.).
Anyway, in terms of Hunters doing badly in groups, that may also have something to do with the fact that you are supposed to do quite a few things that don't seem obvious at first. Like turn off growl, for example.
I'm not even sure if I'm playing hunter right. I sure hope I am.

Thanks for the helpful advice forummates, I'm thinking maybe doing a Hunter and Paladin, since I'm also curious about RP servers, and might put one in there. I'll be sure to check in when I get it so I can find a server where I can bug at least one of you guys.
