@shazza yeah hot sauce down in the southwest always kinda disappoints me. I live up on the east coast but whenever I visit my dad just twenty miles from Mexico the food is only the slightest bit spicier.

We have found a few really good hot sauces, they're just not spicy. There's one that's based on chiltepins, small peppers that are almost exclusive to the Nogales region. It's really unique, not vinegary at all and very subtle.

I also got some cool hot sauce made in Washington from Argentinian peppers. It has a really unique taste, almost like some salad dressings. Great on wings, if you can get some without sauce.

For general purposes, though, the rest of my stash is just some stuff I found made of only vinegar, peppers, and salt.

I always use hot sauce instead of butter or mayo on sandwiches. Butter is basically just there to make the topping stick to the bread anyway
