It really, really isnt. Cheese and fries is one thing, but gravy just does not go with fries well.

Why not? Gravy goes with potatoes just fine.
I mean, unless it's like that shitty powdered prepared gravy.

It depends. Homemade fries don't go well with it and crinkle cut ones are not the best because of the surface/volume ratio, but regular ones are just fine. Also cheese curds change everything.
Some people and places replace the gravy with spaghetti sauce and call it an Italian poutine.
There is a poutine festival in my hometown, it's fairly popular but from what I've heard it doesn't fly high.

poutine doesn't sound that great to me either
i hate putting stuff on top of fries; it makes them soggy and gross just let me dip them PLEASE.
i don't like mixing foods in general >> unless it's rice/gravy/corn mm. my dad is a yank (meaning he was born north of Baton Rouge lol,) and he will just turn his plate into a pile of gravy, gross veggies and fried chicken (traditional yank food,) and i can't imagine how he even tastes it all...it just turns into mush at that point and you can't enjoy the ~flavours
