I'm imagining it about 32x32 in size. One chunk just seems a bit too small.
But yeah, everything we need to build this can be found while building it.

If the tower did start from bedrock, we would have enough stone to build it to the clouds twice over.

The only defences I can think of are walls that are three blocks thick and filled with lava in the middle, or obsidian.
