The best way to KO a Peach (or a Kirby or a Jigglypuff or a well-trained Sonic any light, floaty or air-based character) is to throw them up. It takes them longer to recover and they're more susceptible to those sorts of throws. Essentially, use your Up+B, Smash+Up, Aerial Smash, or Grab+Up on them...
