If you look on the map on the site, there is a LOT of unused area where you'd have lots of nice, free-for-chunks space to build on. There is no need to build near our already-established structures.

Hrm, I haven't really run into any really large expanses of flat biome. I guess it depends on the seed but the ratio of flat:hill:mountain seems pretty good.
